A good diet is an essential part of a healthy lifestyle, more so during the growing up years. Children’s diet must include an adequate amount of protein, which provides essential amino acids that boost growth and development. But how do you make the food tasty enough so that your child does not refuse to eat it?
We bring you an innovative high-protein dish for kids — hummus open sandwich — from Anila Sodhi, a pre-primary teacher (PPRT) at Apeejay School, Mahavir Marg, who is also passionate about cooking. Hummus is a great source of plant-based protein and can be a good snack for vegetarians. In addition, hummus is rich in iron, phosphorus, folate and B vitamins. Studies have also shown that it helps maintain a healthy body weight.

Hummus Open Sandwich


Ingredients
For Hummus
· Chickpeas (boiled) – 1 cup
· Curd- 1 cup
· Boiled and pureed spinach- 1/4 cup
· Boiled and mashed peas – 1/4 cup
· Garlic – 2 cloves
· Cumin powder- 1 tsp
· Salt to taste
· Black pepper- 1 tsp
· Sesame seeds or Tahini sauce- 1/4 cup
· Lemon juice- 2 tsp
· Peanuts- 2 tbsp (optional)
Bread- 2 toasts, grilled
Method
· For Hummus- Add all ingredients to a mixer-grinder and form a fine thick paste.
· Now take a bread toast and apply a generous amount of hummus on it.
· Garnish with peanuts. You can drizzle some olive oil with a dash of black pepper.
· You can also top the sandwich with boiled/ grilled chicken/ boiled eggs. Serve
